BLUEBERRY CHIA OAT MUFFINS

The latest in my series of "Bracks", these muffins make a great easy breakfast or a grab-and-go snack.




Did you know that "chia" is the ancient Mayan word for “strength"?


These teeny tiny black seeds, which come from the plant Salvia hispanica, pack a powerful nutritional punch so I try to squeeze them into as many recipes as possible!


Just 28 grams or 2 tablespoons of chia seeds contains:

  • 11g of fibre

  • 4g of protein

  • 9g of fat, 5 of which are omega-3s

  • 18% of your RDI of Calcium

  • 30% of your RDI of Manganese

  • 30% of your RDI of Magnesium

  • 27% of your RDI of Phosphorus

  • They also contain a decent amount of zinc, vitamin B3 (niacin), potassium, vitamin B1 (thiamine) and vitamin B2

All that for only 137 calories!


This makes them one of the world’s best sources of several important nutrients, calorie for calorie.


On top of this, they're a whole-grain food, usually grown organically, non-GMO and naturally free of gluten.


Combine chia seeds with blueberries, which are the antioxidant boss and can also help heart health, bone strength, skin health, blood pressure, diabetes management, cancer prevention, and mental health...


...to name just a few benefits...
