CORNED BEEF HASH WITH FRIED EGG

A great way to use up leftover mashed potato and veg, Corned Beef Hash makes a hearty, nutritious and budget-friendly breakfast or a quick, easy dinner.




Corned Beef Hash is so nostalgic for me. It was definitely my Mum's go-to "can't be arsed" meal as it's so easy to make and you can keep a tin of corned beef in the cupboard for ages.


We only ever had it for dinner growing up, but I love it as a hearty breakfast/brunch to kick off the week with a bang.

It's a great way to use up the leftover veg from your Sunday roast (I often make extra mash and veg just to make sure I have adequate leftovers for Monday).


If you don't have leftovers, you'll just need to boil and mash some potatoes before making this. The green veg can be fried at the time of making it.


There are loads of substitution options too:

  • Try different veg, such as spinach, green beans or broccoli

  • Try mashed carrots, parsnips, squash or sweet potato instead of the regular mash

  • If you don't like eggs, you could top it with smoky bacon and/or grated cheese
