PORRIDGE FINGERS

Porridge Fingers / Oatmeal Bars / Baked Oats - whatever you want to call them - they're the perfect healthy, filling, grab-and-go breakfast or snack for adults and children alike.

If you've tried making porridge fingers before and found them bland and unappetising, save this recipe to use a base as it makes a super tasty breakfast or snack that always goes down really well with my family.

It's sugar-free as it's sweetened only with fruit, so it's totally suitable for babies 6 months plus. If you wanted to make it sweeter for yourself, you could add 1/4 cup of maple syrup or Sweet Freedom fruit syrup.


If you want to try some other flavour combinations, just leave out the peanut butter and try these ingredients instead...

  • Blueberries and coconut - add about a cup of fresh or frozen berries and a 1/2 cup of desiccated coconut. If you want to make it really creamy and luxurious, swap out the milk for a can of coconut milk.

  • Leave out the banana as well and add a grated apple, a grated carrot and a handful of raisins to make a lovely carrot cake flavour.

  • Raspberries and chocolate chips work well, although chocolate isn't really recommended for babies.

  • Switch the vanilla extract with almond extract, add a cup of frozen cherries and top with flaked almonds to give it a cherry bakewell flavour.
