We all know the usual pancake procedure...
Standing next to a hot frying pan
Pouring in oil, then draining off the excess
Pouring out mixture into perfect shapes
Trying to flip without them dropping on the floor or sticking to the ceiling
Trying to keep a stack warm while you make a full batch
Half your family eating and half still waiting for their serving
For this recipe, you literally just stick all the ingredients in a blender, then pour them into a baking tray! The whole thing is ready at the same time so you and the family can sit enjoying your breakfast together.
Serve warm for breakfast with a dollop of Greek yoghurt or a drizzle of syrup of your choice (I opt for Sweet Freedom Fruit Syrup) or you can have them cold as a snack any time.
Because they're made with ground almonds, they stay really moist for a couple of days and you can even freeze them! Try making a bigger batch than needed and stick some in the freezer to defrost ready for busy mornings.
