We all know the usual pancake procedure...

  • Standing next to a hot frying pan

  • Pouring in oil, then draining off the excess

  • Pouring out mixture into perfect shapes

  • Trying to flip without them dropping on the floor or sticking to the ceiling

  • Trying to keep a stack warm while you make a full batch

  • Half your family eating and half still waiting for their serving

For this recipe, you literally just stick all the ingredients in a blender, then pour them into a baking tray! The whole thing is ready at the same time so you and the family can sit enjoying your breakfast together.

Serve warm for breakfast with a dollop of Greek yoghurt or a drizzle of syrup of your choice (I opt for Sweet Freedom Fruit Syrup) or you can have them cold as a snack any time.

Because they're made with ground almonds, they stay really moist for a couple of days and you can even freeze them! Try making a bigger batch than needed and stick some in the freezer to defrost ready for busy mornings.
